Foodie Friday


This week I have just felt off...tired, grumpy and not very excited about making dinners, so they are pretty boring!!

Sunday we had homemade meatball subs with provolone on homemade rolls with chips and some carrots

Monday left overs

Tuesday we had breakfast for dinner, homemade blueberry pancakes, bacon, home fries -I baked 4 red potatoes in the microwave for 5 minutes than cut them up threw them in a sauce pan with butter, garlic and onions and rosemary until they browned & a fruit salad we have tons of fresh fruit right now..yummo

Wednesday shrimp scampi with brown rice and steamed veggies and a TON of fresh fruit!



Thursday homemade turkey sloppy joes...& homemade coleslaw pretty tasty! I browned turkey meat with onion and garlic then added a can of tomato sauce, a few tablespoons of ketchup, a few tablespoons of brown sugar, a few tsps - tablespoon of Worcestershire sauce. Then simmered until the liquid evaporated.  The coleslaw was super easy I had cabbage left over from fish tacos, so I put cabbage, carrots and white onion in food processor. I added about 1/3 cup mayo, 1/2 cup milk and few tsps of rice vinegar and a few tablespoons of sugar.

You're amazing. I cook that much in a whole year! We eat a lot of breakfast for dinner and that does not include homemade potatoes!! Wow wow wow!!!

Hi Ami. I make a coleslaw similar to what you mentioned but if this is an off week for you - well, I know you - you are an amazing cook and you do it so quickly and effortlessly! Good job Ami. Thanks for the good ideas and contagious enthusiam of preparing for and making dinners. Everyone needs some new ideas to help them out...
